What do you do with the Fish your Fishermen bring home?

Many southern cooks are familiar with Catfish. If your fisherman or fisherwoman have brought home the catch of the day  and you are wondering what to do with it now. Below is a favorite southern dish called Fried Catfish with Swamp Gravy. Here is what you will need for this dish. Catfish, cleaned and dressed Salt Black pepper Cornmeal, fine or medium sifted Grease First, wash the fish. Then cover it in cold water. In a brown paper bag or a gallon size zip lock freezer bag, mix cornmeal, salt and pepper. Heat the grease until it sizzles when water is sprinkled in it. Then add one or two fish to the bag of meal at one time. Shake until covered completely. Remove fish from bag and drop slowly into hot grease. Fry until golden brown on both sides. Drain on a brown paper bag or paper towel which is placed on a serving plate or platter. When all the fish as been fried, pour up as much of the excess grease from the frying pan leaving the drippings in the bottom of the pan.
